These vines are planted in Linne-Calodo soils, dry farmed, head trained and certified organic. This site is a step hillside slope 1,000 feet in elevation.
Production Notes This native fermentation started below 70 degrees and remained cool the entire way through peaking at 81 degrees. It was splash racked twice a day and gave off aromas of dark forest fruits.
