Vineyard Notes
Sourced from the Bailey Ranch Vineyard in the Adelaida District this 20+ year old vineyard is located on the west side of Paso Robles. These vines are planted in Linne-Calodo soils, dry farmed, head trained and certified organic. This site is a step hillside slope 1,000 feet in elevation.
Production Notes
This native fermentation started below 70 degrees and remained cool the entire way through peaking at 81 degrees.
